  • 2 tablespoons Herbs Fresh thyme and chives; dried herbs are excellent substitutes.

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out your puff pastry on a floured surface, cutting it into rectangles, roughly 4x6 inches.
  3. In a mixing bowl, combine the eggs, cheeses, bacon, onions, and seasonings. Stir until well mixed.
  4. Spoon the filling onto one half of each pastry rectangle, leaving a border.
  5. Fold the other half over the filling and crimp the edges with a fork.
  6. Brush the top of each pop-tart with an egg wash made from whisking an egg with a splash of water.
  7. Place the pop-tarts on the baking sheet and bake for 18-22 minutes until golden brown.
  8. Allow to cool for about 5 minutes before serving.
