  2. Heat the mixture over medium heat until simmering, stirring constantly for 2-3 minutes until fully dissolved.
  3. Gradually add sugar while stirring until completely dissolved; then remove from heat.
  4. Mix in candy flavoring and optional citric acid.
  5. Pour into a lightly oiled heatproof glass dish; add a few drops of food coloring and swirl gently.
  6. Refrigerate for 2-3 hours until set completely.
  7. Carefully cut the set candy into desired crystal shapes.
  8. Place on parchment-lined cookie sheet and let dry at room temperature for 2-3 days to develop a crunchy outer crust.
