- Line an 8x8 baking dish with parchment paper, leaving a little overhang for easy removal.
- In a large microwave-safe bowl, combine white chocolate chips, mini marshmallows, and butter.
- Microwave the mixture in 30-second bursts, stirring after each, until completely melted and smooth.
- Stir in the vanilla extract until fully incorporated.
- Fold in the chopped gumdrops gently to evenly distribute them throughout the mixture.
- Pour the mixture into the prepared pan and use a spatula to spread it into an even layer.
- Chill in the refrigerator for at least 2 hours or until firm.
- Once set, lift the candy out using the parchment overhang and slice into squares using a sharp knife.
