  • 200 g rolled oats
  • 600 ml milk (or a non-dairy alternative)
  • 100 g brown sugar
  • 2 large eggs (Large eggs)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 50 g melted butter (or coconut oil) Use as preferred
  • 50 g raisins or chopped nuts For added texture

  1. Preheat your oven to 180°C (350°F) and grease a baking dish (about 20cm x 20cm) with some butter or oil.
  2. In a large bowl, combine the rolled oats, brown sugar, baking powder, ground cinnamon, and salt. Mix them well to ensure everything is evenly distributed.
  3. In another bowl, whisk together the eggs, milk, melted butter (or coconut oil), and vanilla extract until smoothly combined.
  4. Pour the wet ingredients into the dry ingredients. Stir gently until everything is combined. If you’re adding raisins or nuts, fold them in now.
  5. Transfer the mixture into your prepared baking dish, spreading it out evenly.
  6. Bake in the preheated oven for about 35-40 minutes, or until the top is golden and the centre has set.
  7. Allow it to cool for a few minutes before serving. It will naturally thicken up a bit as it cools.
  8. Cut it into squares or scoop it into bowls. For a real treat, drizzle a spoonful of cream cheese icing or a simple glaze made from icing sugar and milk over the top.
  9. Serve warm with an added sprinkle of cinnamon or a dusting of powdered sugar. Fresh fruit, yogurt, or nut butter can be added for extra flavor.
