- Preheat your oven to 180°C (350°F) and grease a baking dish (about 20cm x 20cm) with some butter or oil.
- In a large bowl, combine the rolled oats, brown sugar, baking powder, ground cinnamon, and salt. Mix them well to ensure everything is evenly distributed.
- In another bowl, whisk together the eggs, milk, melted butter (or coconut oil), and vanilla extract until smoothly combined.
- Pour the wet ingredients into the dry ingredients. Stir gently until everything is combined. If you’re adding raisins or nuts, fold them in now.
- Transfer the mixture into your prepared baking dish, spreading it out evenly.
- Bake in the preheated oven for about 35-40 minutes, or until the top is golden and the centre has set.
- Allow it to cool for a few minutes before serving. It will naturally thicken up a bit as it cools.
- Cut it into squares or scoop it into bowls. For a real treat, drizzle a spoonful of cream cheese icing or a simple glaze made from icing sugar and milk over the top.
- Serve warm with an added sprinkle of cinnamon or a dusting of powdered sugar. Fresh fruit, yogurt, or nut butter can be added for extra flavor.
