  1. In a medium saucepan, combine the rolled oats, whole milk, and salt.
  2. Bring the mixture to a gentle boil over medium heat, then reduce the heat to low.
  3. Simmer the oats, stirring occasionally, for about 8 minutes until the oats are tender and the mixture is creamy.
  4. Remove the saucepan from heat and stir in the vanilla extract, brown sugar, and unsalted butter until the butter is melted and the sugar is dissolved.
  5. Divide the oatmeal into two bowls and sprinkle the semi-sweet chocolate chips evenly on top.
  6. Let the oatmeal sit for 2 minutes to allow the chocolate chips to soften slightly before serving.
