  • 1/4 cup cornstarch
  • 3/4 cup water
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

  1. Peel, core, and slice 6 cups of apples (about 6 medium apples). Toss with 2 tablespoons fresh lemon juice in a large bowl.
  2. In a separate bowl, whisk together 3/4 cup granulated sugar, 1/4 cup packed brown sugar, 2 teaspoons ground cinnamon, 1/4 teaspoon ground nutmeg, 1/4 teaspoon salt, and 1/4 cup cornstarch.
  3. In a large saucepan, combine 3/4 cup water and the dry ingredient mixture. Whisk until smooth. Cook over medium heat, stirring, until thickened and bubbly (about 3–4 minutes).
  4. Add apples to the pan, stirring to coat. Reduce heat to medium-low and cook, stirring often, for 8–10 minutes until apples are just tender and sauce is glossy and thick.
  5. Remove from heat. Stir in 2 tablespoons unsalted butter and 1 teaspoon vanilla extract until the butter melts and the filling is silky.
  6. Let cool to room temperature. Use in pies, desserts, or transfer to jars for storage in the fridge (up to 5 days) or freezer (up to 3 months).
